If we're looking at specific stocks, then taking profit (i.e. not complete liquidation) can be an option, because everything is just on paper till it's realised.
For example, if you had a stock that run up 100%-200% (as is common in the US market), selling off 1/2 or 1/3 would result in you recovering your capital. No matter what happens now, you won't make a loss.
If it's on mutual funds or ETFs, some measure of profit taking can be done as well, but usually if you did ETFs or mutual funds, you'll let them run over years.
Don't go chasing after the peaks and the valleys. I've never seen anyone catch them.
