A handwritten card is what I would usually prepare. Together with it would be a box of chocolates. (Quite common, but it just goes well together)

If it’s someone whom you respect a lot, you can take him out for a nice meal, like a buffet, so it gives you more time to talk too.

I would either write him a card, or ask him out for a meal. This will help to maintain the relationship, and may even open up doors if you are looking for opportunities in the future!
