I am studying a part time degree in computer science, and I am working full time in an unrelated field earning roughly $2k. I am currently servicing my school loans at $400/month. Everyday I eat mixed rice to save half my income. I have an offer for a 1 year software engineering internship at a prestigious company, but the pay is $1200/month. Should I take up the internship, possibly eating grass for one year, however increasing my earning potential by possibly 2x my pay now after the 1 year?

your pay low becoz you are currently in the wrong field & probably is market rate for the diploma for that sector.
internship dont guarantee a job. Many company just want some cheap labour for short term.
$800 per mth means you loses $9.6k a year
A software fresh uni grad around $3.5 to $4k. Doubling $2k is because of the market rate, is not because of joining the company
Instead be patience, wait till you complete your degree then apply for a full time software engineer.
Lastly grass dont taste good.
