If I recall correctly - as part of the messaging protocol between merchants and card associations is the tag "Card not present" (ie it wasn't swiped/chipped at a terminal and card details manually entered in). It is by using this field that banks determine a transaction to be online. This is independent of a retailers MCC.
Anything through Google would be Card Not Present so should count as online.
