I have asked my parents about it and they kept on telling me to find the documents to read it, and they can't remember what they bought. Recently, my uncle also told me that my dad bought some education plan for me last time but when I tried reading the documents, I don't see any "education plan", so I'm not sure if there was a document for that. In this case, is there a way for me to find a consolidated list of all insurance and endowment plans that I have? And the total sum assured?

Take note that only the policyowner is allowed to make the check. Therefore, ask your parents to do it. Otherwise, it is impersonation and this is against the law.
If your parents cannot remember the insurance company, then they will have to call each individual company one by one. Accordingly, I have listed the contact details in the link above.
Once this is completed, request for the insurance company to send you a copy of the insurance coverage document (typically referred to as the Policy Schedule).

Passed on what you just mentioned, it seems that the Education plan could have been an endowment plan. Do you happen to know which insurer your parents could have gotten policies from? I think it would be easier to contact the insurer as they will most likely have your records and will able to advise you or consolidate for you what you have with them.
If you are not the policy owner, you could contact the insurer in the presence of your parent(s) so that they can provide the information needed for verification when asked.
