How can I unstake my locked coins (Ada, Vet, Sol) on Binance.com so that I can transfer them out before 26Oct?

You can just click redeem and they should be in your Spot wallet within 48 hours. I barely had any funds in Binance besides my ADA as the Staking returns were really great. Moved that to Yoroi now and my BTC+ETH are at Hodlnaut. Hodlnaut actually pays 7.4% to HODL your BTC and ETH there, so I just use that. Now i'm actually buying Altcoins on Kucoin as they have a wide range of coins and low fees too.

I haven't unstaked mine, but this should be how to do it:
Wallet > Earn > Click on the staked item > Redeem

There might be some coins paying out interesr soon like ADA, tmr (for me). Do look out before unstaking. Also, it takes about 48-72hrs to redeem, so don't do it too late.

I'm currently looking at Kucoin for storage and lending.

Also, planning to buy on Gemini and take advantage of the 10 free withdrawals every month. I don't trade, so 10/month is more than enough. So buy on Gemini and withdraw to Kucoin. Not keeping in Gemini due to the custodian fee. Using Gemini for buys as I've linked xfers and the deposit is so fast! Sadly Kucoin doesn't have p2p in SGD. But that's fine, I have Gemini.

If you're using Gemini to purchase, remember to use the Web App and activate active trader mode for cheaper fees. Do not buy on the mobile app.

Considering Huobi too. Seems like they have moved out from China and have a SG office. Huobi has p2p in SGD.

If you have BTC, ETH or specific stable coins, you can consider Hodlnaut, SG company doing lending.
