I have a baby account together with my parents with POSB. Aside from that, I do not have any POSB or DBS account. Am I able to open a new separate DBS account without touching the baby account? I am also a little confused about whether all DBS accounts are multi-currency accounts. Thanks in advance!

Yes, I believe you are able to. Not all DBS accounts are multi-currency, but aside from those with 'Multi-currency' in their name (which are definitely multi-currency), the DBS Multiplier and My Account are both multi-currency as well.
