Why not sign all 3 (spaced relatively apart so that your credit score does not take a hit)? Citi and SC has great signup bonuses, which requires X amount of spending. So if I am you, I will sign UOB (for highest 1.7%) and either Citi or SC first.
Use Citi/SC (mastercard) when UOB is not accepted (AMEX). I feel that its a hassle to keep track of grabpay wallet when routing UOB via grab debit mastercard. Citi/SC cards have nice perks too

Hi Anon,
When it comes to strictly about the card use, I think UOB Absolute is the best. Not only does it offer the highest cashback rate (1.7% vs 1.6% vs 1.5%), but it also awards cashback on Grabpay top-ups.
This basically allows you to perpetually stack your cashback reward of 1.7% with the Grab points you earn from GrabPay card payments - top up your Grab balance with UOB Absolute (1.7%), then pay for all your expenses with GrabPay card/wallet (0.6 - 1.2%, depending on membership tier).
This helps you to significantly boost your cashback earning potential, even if it may be in the form of Grab points. You also don't have to worry about AMEX not being accepted since GrabPay card is a Mastercard.
If you take into account signup rewards, then sure, Citi Cashback+ and SC Unlimited are viable options. But for long-term spending purposes, they don't compare to UOB Absolute.
Hope this helps!
