We tried rescheduling but the additional cost was another trip's flight and was simply not worth it. Call center was unresponsive & insurance company was not able to refund either. Anyone knows what I can do now?

Hi there, I would actually suggest that you try your best to call in the Scoot helpline repeatedly. Don't try the travel insurance side, they wont be able to help you.
Explain to them the situation you were in and you should really press for a refund via at least redemption tickets or the gift vouchers to be used within 1 year of your trip.
I think in this situation and juncture, it's about persistence more than anything. Hope you manage to get back your flight trip!
