I’m considering switching jobs but I don’t really know how to approach the topic of quitting my current job. Do I just email the notice letter to my boss and that’s it?

First discuss with your immediate boss. I think most companies require you to serve a notice period, usually 1 month. Then type out a letter to say that you are going to resign and give it to your boss. I'm sure you can google for the appropriate template for the letter online.
I feel that emailing your resignation letter is very bad etiquette. Almost feels like breaking up with your steady through text.

If you have finally decided to resign from the company, most company will accept an email notice to your supervisor and copy your human resource representative. Your supervisor will need to accept your resignation, and then HR will proceed with the logistic followup.
