Showcasing projects are a great way to prove your skills. Contribute to open source and be active on github. Starting blogging on relevant software engineering topics would also be a fair idea.
Also try to self reflect and see what's keeping you from passing the interviews. Is it technical know how? Then work more stuff on hackerrank. Is it soft skills? I recommend Soft skils: The software developer's life manual. If it's interviewing skills then learn to answer common interview questions with a friend.
