From the security angle, how is Grab ensuring that our money is safe or how is the money that is being placed inside the wallet being used by Grab?

Hi anon, if I'm not wrong Grab wallet monies are not used to invest or anything like that, so not to worry!

However, if you're talking about if Grab is going to embezzle, misappropriate or not store the money safely, I think its highly doubtful because they have a digital bank license and have to follow MAS' regulations and I think risk would be pretty low as such.
