Do employers prefer candidates with relevant internships experience rather than candidates with a diversity of experience that may not be relevant to the job you are applying?
It seems that companies prefer the graduate who has countless internships rather than the one who explores different part time jobs prior to their first job.

It really depends on what kind of jobs you're looking at. If you are applying for a niche role, then it will be more useful if you have done internships relevant to that role.

This really depends on the nature of the role you are applying for. Relevant internships may be a plus for roles that may be more technical and require you to have a certain skill set, primarily because the company do not have to spend time and resources to train you in that area. With the pandemic, training might even be more tricky for some roles.
With regards to the point of comparing someone that has countless internships vs someone that explores different part time jobs, I believe what is most important is what does the person's experiences tell you about this person. For instance, during the interviews, the employer may ask for you to elaborate on your various job experiences and if you can show the beneficial takeaways from it (Eg. Soft skills like communications, time management or hard skills like marketing skills, data analysis) they may find you more attractive. I don't believe it is the quantity of the experiences that matter, but more of the quality (i.e. what have you learnt and takeaway from it).
Most importantly, do note that companies also look for culture fit, so if you are comparing 2 candidates with similiar credentials, the one that fits the companies' beliefs, values or even the team within the company will stand out!
So personal branding here is crucial and remember you have a choice to pick a company that you like and best suits you!:)
