Hi, I’m currently 25 (hard science major) and having my honours year internship now before graduating in December. My true passion and motivation lie in Data Science & Analytics (more towards Machine Learning, AI and Data Analysis/Visualisation). However, I figured that out a tad too late in the course of my tertiary education. May I please ask how cI can make myself more appealing to future employers?
I’m already taking a lot of coding courses on edX and constantly reading and learning as I should. I am also planning to uptake several data science internships after my current internship. So I would really appreciate it if advices can cover anything not covered in my plan! :)

It is great to hear that you are already engaged and learning online from sites like eDX. It is the best way to start your learning. Most of the common practical AI & Data Science courses in real life application, you could learn from the technology providers likes Amazon's AWS, Microsoft Azure Cloud and Google GCP courses. They do have certification, which makes you very attractive and employable in AI & Data Science jobs.
Google certification with speciality as data engineer, ML engineer, data scientist (https://cloud.google.com/certification/#certifi...)https://cloud.google.com/certification/#certifi...ths (https://cloud.google.com/certification/data-eng...)https://cloud.google.com/certification/data-engineer(https://cloud.google.com/certification/machine-...)https://cloud.google.com/certification/machine-...ineer

I was in similar shoes, in which I changed career paths into analytics straight out of graduation. It will not be an easy task. Best way imho is to do a project with the skills you have acquired. It is the best way to demonstrate to your future employers that you are able to implement what you have learned, in code, on a real world (or at least realistic) problem.
Besides internships, you might want to consider these:
