I've worked at a couple of startups before here's my take. Startups can be risky but not all startups are the same. There are startups with horrid leadership and dont know what they're doing trying to string you along but there are also startups that provide great career acceleration and personally growth opportunities.
That said, what matters most isnt whether the place is a startup or not. Instead, what matters is company direction and leadership. One thing to remember is that while they're interviewing you, you are also interviewing them, ask questions that matter to you, be it about job scope, overall management, benefits or even mundane things such as location. Ask the right questions to evaluate and trust your instinct.
