Hi Jay,
If your monthly spending is unable to reach the minimum spending amount of $500, I would suggest finding another credit card to use. The point of a credit card is to enjoy benefits and rewards for expenses that are already a part of your lifestyle. You shouldn't have to adjust your expenses and spending habits just so you can "get more" out of a credit card - this is a dangerous path to walk.
It may feel bad because most cards with no minimum spending don't offer too amazing rewards. Cashback is usually 1.5% - 1.7%, and the miles earn rate is about 1.2 mpd. But this is certainly better than inflating your lifestyle just to earn a few more % of cashback from your credit card.
