I'm looking at Kucoin or Huobi due to its low fees and large numbers of coins that it supports. But I can't decide. Both have p2p and staking, no custodian fees. What are you thoughts?

Open accounts in both (it's free). I also have FTX, Gemini, cryptocom, and coinhako (+ binance, Kucoin).
You need to think also about your crypto - fiat strategy. How do you sell crypto and cash out? Which exchange can do that for you?

I have accounts with Gemini, cryptocom, FTX, Kraken and Kucoin. I have many accounts as only certain exchanges support the altcoins I want to withdraw/trade.
My onramp/offramp method is via Gemini as they allow trading of ETHSGD and BTCSGD pairs.
FTX is my preferred platform to trade perpetual futures.
And the rest of the exchanges I have them just because they support different altcoins.
