Opinions on AMEX credit cards in Singapore? Are they worth getting, considering how they have lesser merchants?

I do have some Amex cards previously and it served me well until my needs changed. It can be a good card and sometimes there's sign up promos too, just that the biggest issue is not all merchants accept amex, which I feel this is something they can work on.

It is not exactly true. In fact, some of the AMEX cards are pretty popular!

For instance, you can look into their cashback or miles card.

The only downside associated with AMEX is not all merchants accept it (as compared to VISA or MasterCard).
