If I am a sole proprietor of a business and hire someone to help me with managing the store for example, would I need to contribute the 17% CPF for this employee if their monthly wage exceeds $750?

Yes if they fulfill the below

CPF contributions are payable for part-time/casual/temporary employees who are:

Singapore Citizens/Singapore Permanent Residents,

Earning more than $50 in a month, and

Engaged under a contract of service.
