How would you take into account exchange rate risk for valuation of overseas assets? Can't really find this online.

Its mostly a price/market risk. One way to look at is to see how low both the impact of both the price of the asset and the fx rate gets hit during a crisis/stressed situation. The additional decline (as compared to a similar asset locally) would be attributable to the fx risk
