Supply and demand. More demand, ppl have to bid more to get the stock, so stock goes up. Vice-versa.

Also depending on how much investors are willing to sell the shares at. If all the investor holding apple shares are only willing to sell at $200, buyers have to match that $200 in order to make a buy, thus increasing stock price.
