How do I check how much cashback I got from my UOB card? I don't see it anywhere.

On that note, how do I go about using my cashback rewards? Can it be withdrawn into my account?

We wont know unless you tell us what kind of UOB card it is. some cards cash rebate is not automatic, you have to redeem it via their points system (usually via SMS, you can do a simple google search for yours). your monthly statement should also indicate somewhere on the first page how much points/rebate you have.
