I know the government has said that the Covid-19 vaccine is safe for children. But as a parent, I'm still worried. I mean we really never know right?...

The vaccines are proven to build resistance to infection. Even if someone vaccinated gets infected, s/he will likely to have lower severity symptoms from Covid19.
Whether there is any reaction from the vaccine depends on how each body reacts to the vaccine, and the rate of occurrence is low. This is true for ALL vaccines, including BCG vaccine that we took when we were young. But does that stop you from having your kid vaccinated back when young? I'm sure most of the kids gets fever and stuff when vaccinated as infants too.
To put it nicely, you should go for the low risk and low impact (coz doctors are on standby), to lower the chance and severity of the high impact (COVID19) situation.
typed and deleted the "To put it crudely" part. Sorry, had a bad week, and really on the verge of venting it out. Hahaha
