Wondering if it's just me but I'm usually too gassed out to do anything else after a long day at work, though I'd love to attend classes and workout, and on top of that still have a healthy sleep schedule.

Definitely not easy... myself included. haha. I believe that it's about balance between discipline and routine.
β
When I was agressively training and doing calisthenics (some bodyweight workout routine) for 3 months, it was a really disciplined period but after i 'hit' my goals, I started to go back to my normal routine and no longer train as hard for 3 times a week.
β
What really helped during that period was I got a digital coach whom I would zoom every week so he would know my progress. And if I didn't have progress, I would feel like I am not accountable to this coach whom I'm paying for.

Ya, is pretty hard. Will feel very lazy sometime after work.

Take a 2 to 3 days break, occasionally to recharge. Go attend classes/workout which you want, during your day off.
β
This is trying to get your body and mind adapt to the changes progressively, until it become a habit.
