Here is my brief opinion on both airlines for long-haul flights.
Service: Both airlines provide simliar level of service. On the whole, I prefer Singapore Airlines - slightly better with no flaw.
Food: Both airlines serve decent food.
In-flight entertainment: Emirates has an edge if you managed to fly via their new aircraft - bigger screen and headphones are more comfortable than the earphones provided by Singapore Airlines.
Leg Space: Emirates economy is slightly more spacious.
On the whole, for a similar price, I will prefer Singapore Airlines - love their service and overall experience. However, if I am using AIA Vitality, I will prefer Emirates since I get a huge discount off their ticket.

I don't particularly have any preference when it comes to Economy.
For business, it's probably SQ's 2017 J. Emirates had a little too much bling in their cabin for J if you ask me. Also, the prospect of flying 2-3-2 in J isn't very appealing.
For first class, it's a shake up. Emirates F on the A380 allows you to shower on board. SQ F is close behind, but they have suites, which Emirates doesn't have. So it's a really close fight in F.
Ultimately it will depend on which cabin you are flying in.
