What are your thoughts on those meal subscription plans? When would it be worth to sign up for such plans?

I would say once the convenience and ease of it is worth more to you than the slight premium you pay for it.
If you have a busy schedule and long hours, meal subcription plans may be a good choice since you are unable to cater time and energy to go through the whole cooking process (recipe searching, grocery shopping, cooking, cleaning dishes, washing up).
An alternative may be to just allocate one day a week to meal prep for the entire week so you enjoy some convenience throughout that week. However, the lack of choice would come as a cost.
I would say it ultimately comes down to the different opportunity cost of the various options (Meal prep, everyday cooking, meal subscription plans) and how they add up in your situation.

Ask yourself what premium you are paying by cooking yourself - both in terms of effort/energy and time. If your work doesn't give you much free time, even that 1-2 hours spent preparing can be a lot of time out of your schedule.
A useful heuristic I use for considering whether something is worth my time is by asking whether I can save/gain the same amount from working 1 hour at my day job with it.
If the 1-2 hours saved from using a meal plan instead of prepping gives you an hour or two of productive work (or good rest; both are important) then it may be worth your while. And the converse is true.
But there are many other factors, like cost, choice, etc.
Also, I assume that your alternative to meal plan is meal prep/self-cook, otherwise you wouldn't even be thinking along these lines. In truth, the cheapest and fastest option by far is to buy from downstairs hawker centre but we all know what that does to our heart and weight.
